Characteristics and properties
Euphoria’s KALAMATA PDO authentic extra virgin olive oil is of Protected Designation of Origin (PDO). It is cultivated in Messinia, Pelopponese and is obtained from the monovarietal variety of Koroneiki. Koroneiki olives are considered to be the queen of olives and are well known worldwide. Its elegant character is characterized by a smooth sweet vibrant flavor with moderate spicy and bitter, pungent peppery finish. The aroma is intense and fruity with high intensity of apple, almond, banana and green grass and its color is bright green. The pungent peppery touch that you can feel in the back of your throat is a sign of a fresh and healthy olive oil.
Euphoria olive oil is cold pressed and therefore, it has a high content of oleic acid (76 – 80%) and is rich in polyphenols which have beneficial effects on health due to their antioxidant and anti-inflammatory properties.
Farming methods
Our ethical growers use traditional farming techniques and practices to produce premium quality olive oil. The olive trees are grown exclusively in Kalamata region which has the highest rate of extra virgin olive oil across Greece. The harvest starts early when the olives are unripe, small and green and uses cold extraction methods. This is the reason that our olive oil has such a low acidity and is rich in antioxidants like vitamin E, polyphenols and other bioactive compounds.

Methods of use
According to research, extra virgin olive oil (EVOO) is one of the healthiest oils to use for cooking and there are endless variations on how to use it. It is ideal over warm or cold dishes, on salads, on dressings, marinades, vinaigrettes, sauces and soups. It is also ideally used in stewing, sautéing, roasting, frying and baking.
Most studies suggest that extra virgin olive oil’s smoke point ranges from 350 °F to 410 °F and therefore, it can handle higher heat than butter for example. Some premium types of EVOO may even have higher smoke point which can reach up to 425 °F which is well above frying temperature.
How to store your EVOO
Keep in mind that it is very important to store correctly your EVOO so that you preserve its polyphenol levels.
Please keep it in a cool, dark place away from direct light and hot stove and ideally use it within 3 months from opening a bottle.
